Padengi bajil / Mooga usli and poha chutney /Sprouted moong usli with masala poha is another Mangalorean breakfast specialty. this is a very nutritious, wholesome, tasty, and healthy combo. The other popular combos of Mangalorean breakfast are Kadle bajil/ Chana usli with poha,Bajl sajjige/ Poha with upma.
Ingredients
Ingredients for Moong usli/ Padengi:
1 cup sprouted moong/ green gram
3 tsp oil
1 tsp mustard
1 sprig of curry leaf
3 finely chopped green chillies
1/2 tsp hing/ asafoetida
2 tbsp grated fresh coconut
Salt to taste
Ingredients for Poha/Bajil:
2 cups fresh grated coconut (use white part only)
1 1/2 cups poha /beaten rice)
Salt to taste
For masala:
2 tsp coriander seeds/Dania
1 tsp cumin seeds/jeera
1 green chilli
3-4 byadgi red chillies
jaggery or sugar to taste
salt to taste
Crush all the above ingredients.
For tempering:
3 tsp oil
2 tsp mustard
1 sprig of curry leaves
Procedure
To make moong usli/padengi:
Heat oil in a pan, add mustard, when it starts crackling add curry leaves, green chillies, and fry for a minute
Add hing, fry for a second, followed by the boiled green gram,salt to taste,grated coconut, and mix well
And your green gram usli is ready to serve
Don't overcook the green gram and boil it with minimum water.
To make Poha:
In a bowl mix coconut and the crushed masala
Add the tempering
Mix poha and serve immediately with moong usli.
