Padengi Bajil


Padengi bajil / Mooga usli and poha chutney /Sprouted moong usli with masala poha is another Mangalorean breakfast specialty. this is a very nutritious, wholesome, tasty, and healthy combo. The other popular combos of Mangalorean breakfast are Kadle bajil/ Chana usli with poha,Bajl sajjige/ Poha with upma.




Ingredients


Ingredients for Moong usli/ Padengi:


1 cup sprouted moong/ green gram

3 tsp oil

1 tsp mustard

1 sprig of curry leaf

3 finely chopped green chillies

1/2 tsp hing/ asafoetida

2 tbsp grated fresh coconut

Salt to taste


Ingredients for Poha/Bajil:


2 cups fresh grated coconut (use white part only)

1 1/2 cups poha /beaten rice)

Salt to taste


For masala:

2 tsp coriander seeds/Dania

1 tsp cumin seeds/jeera

1 green chilli

3-4 byadgi red chillies

jaggery or sugar to taste

salt to taste

Crush all the above ingredients.


For tempering:

3 tsp oil

2 tsp mustard

1 sprig of curry leaves




Procedure


To make moong usli/padengi:

  • Heat oil in a pan, add mustard, when it starts crackling add curry leaves, green chillies, and fry for a minute

  • Add hing, fry for a second, followed by the boiled green gram,salt to taste,grated coconut, and mix well

  • And your green gram usli is ready to serve

  • Don't overcook the green gram and boil it with minimum water.

To make Poha:

  • In a bowl mix coconut and the crushed masala

  • Add the tempering

  • Mix poha and serve immediately with moong usli.
