Tambli / Thambuli is a type of Raita eaten in the Indian state of Karnataka. Tambuli, being a curd-based cuisine, is consumed with rice. Tambuli is derived from the Kannada word Thampu. Thampu meaning cool/cold. So Tambuli is a cooling food.
Ingredients
Pumpkin core/ dudde gheeru / Sihigumbalkayi thirulu (discard the seeds)
1 oil
1/2 cup grated fresh coconut
1/2 green chilli
1 small red chilli
1 tsp jeera/ cumin seeds
1/2 cup fresh curds
Salt to taste
For the tempering:
2 tsp oil
1 tsp mustard
curry leaves
1 red chilli bits
Pinch of hing / asafoetida
Procedure
Separate the seeds from the core and chop them roughly
In a pan heat 1 tsp oil and fry green chilli, red chilli and jeera and remove it on a plate
In the same Kadai roast the chopped pumpkin core for 2-3 mins, till its colour changes
Remove it and grind with coconut, salt into a fine paste
Add curds to the ground paste, add water and adjust the consistency
Check the salt and add the tempering with the mentioned ingredients
Serve with rice.
