Mitta Gallele Saala or Brined jackfruit is a traditional method to preserve the raw jackfruit for the monsoon season. The jackfruit segments obtained just before ripening is preserved in saltwater. Be careful while adding salt to the dishes using brined items as it has lots of salt in it. You can prepare Stir fry, curry, and other dishes from this.

Ingredients
1 cup dosa rice
1/2 cup Toor dal
1/2 cup grated coconut
7-8 red chillies
Salt to taste
1/2 cup roughly chopped saal/ brined jackfruit segments
Oil for deep frying
Procedure
Soak rice and dal in water for 2 hrs
In the mixer first grind coconut and red chillies, once it is finely ground add soaked rice, dal mixture
Grind it into a little coarse batter adding very little water
Wash the brined jackfruit 2-3 times in water and add in the mixer,grind with the batter only for 2 mins( or just pulse it)
Transfer the batter to a bowl and check for the salt (be careful while adding salt, because the jackfruit segment already has salt)
Heat oil, divide the batter into portions and make balls, press the balls slightly and deep fry on a medium flame into crisp vadas
Serve hot with rice and dal.
