Batato Piyava Upkari / Potato Onion Stir Fry

This is a simple delicious stir fry that goes well when served with hot rice and dal or with kanji/ Ganji. This is a typical Konkani style stir fry, which is simple yet comforting. This is prepared with very minimum ingredients.



Ingredients

2 large potatoes

2 medium onions

4-5 tsp oil

1 tsp mustard

3-4 red chillies cut into bits

Salt to taste


Procedure



  • Wash and peel the potatoes and cut into thin juliennes. Put the cut potatoes immediately in water. Let it remain so till rest of the preparations are done with.

  • Peel the onions and slice them vertically into thin slices finely.

  • Heat oil in a Kadai, add mustard. When they begin to splutter add red chilli bits.

  • Lower the flame, fry for a second and add the onion slices. Continue frying till they turn translucent.

  • Meanwhile, drain off the water and rinse the potatoes under running water by putting them in a colander.

  • Drain all the water, and add to the kadayi once the onions have turned light pinkish, mix well.

  • Add salt and mix. Lower the heat and cover with a lid.

  • Sprinkle water in between only if you find the need, and cook till done.

  • Serve hot with hot rice and dal or Ganji / Konji / Paej.


  • This stir fry tastes better if you can prepare it in an Iron Kadai or skillet…
