Ingredients
2 kaarate/ bittergourds/ haagalkaayi
1 small raw mango
2-3 tsp poha chutney masala or sambar powder
Salt to taste
Jaggery to taste
For the tempering:
3-4 Tsp oil
1 tsp mustard
curry leaves
2 tsp urad dal
3 slit green chillies
1/2 tsp Haldi
Procedure
Wash and cut the bitter gourd into thin half roundels
Apply salt and keep for 30 mins, after 30 mins squeeze out the water from bitter gourd and cook with 1/2 cup water, in cooker for whistles
In a pan heat oil and add mustard, when it starts crackling add curry leaves, urad dal, and fry till it becomes light brown
Add Haldi and raw mango pieces and cook, once the raw mango pieces are cooked add cooked bitter gourd, salt, masala powder, and jaggery
Add water to adjust the consistency, cook for 5-10 mins, till it becomes a little thick
Serve with hot rice and dal.
