Bittergourd Sweet Pickle(instant)




Ingredients

2 kaarate/ bittergourds/ haagalkaayi

1 small raw mango

2-3 tsp poha chutney masala or sambar powder

Salt to taste

Jaggery to taste


For the tempering:

3-4 Tsp oil

1 tsp mustard

curry leaves

2 tsp urad dal

3 slit green chillies

1/2 tsp Haldi




Procedure


  • Wash and cut the bitter gourd into thin half roundels

  • Apply salt and keep for 30 mins, after 30 mins squeeze out the water from bitter gourd and cook with 1/2 cup water, in cooker for whistles

  • In a pan heat oil and add mustard, when it starts crackling add curry leaves, urad dal, and fry till it becomes light brown

  • Add Haldi and raw mango pieces and cook, once the raw mango pieces are cooked add cooked bitter gourd, salt, masala powder, and jaggery

  • Add water to adjust the consistency, cook for 5-10 mins, till it becomes a little thick

  • Serve with hot rice and dal.
