Brined Raw Mango Gojju


Brined raw mango is called Khalambo in Konkani. This gojju/ chutney is prepared with brined raw mango. If brined mango is not available you can use fresh raw mango by pressure cooking it.


Ingredients


1 cup grated coconut

Salt to taste

5 garlic cloves

3 red chillies roasted in oil

Brined raw mango pieces according to taste

2-3 tsp coconut oil



Procedure


  • Grind all the above ingredients except oil, adding little water

  • Make a fine paste, transfer the ground gojju to a serving bowl, add coconut oil, and mix well

  • Serve with rice and dal

  • Be careful while adding salt, as the brined mangoes are very salty
