Ghosale Upkari / Ridgegourd Stir Fry

Ingredients


2 ghosale/ ridge gourd/ heere kaayi

1 potato

4 tsp oil

1 tsp mustard

1/2 tsp hing/ asafoetida

3 green chillies slit

Salt to taste




Procedure


  • Wash and remove the skin of the ridge gourd, and cut into pieces

  • Peel the potatoes and cut into small, thin slices

  • Heat oil in a pan,add mustard, when it crackles, add hing and green chillies

  • Fry for a second,add potato slices,1/4 cup water and cook with a lid covered

  • Once it is half done, add salt and chopped ridge gourd,mix well and cook till it is cooked

  • Serve hot with rice and dal
