Tambli / Thambuli is a type of Raita eaten in the Indian state of Karnataka. Tambuli, being a curd-based cuisine, is consumed with rice. Tambuli is derived from the Kannada word Thampu. Thampu meaning cool/cold. So Tambuli is a cooling food.
Ingredients
1/2 cup chopped ridge gourd/heerekayi/turai
1/2 green chilli
1 tsp jeera/cumin seeds
1/2 tsp oil
3/4 cup coconut gratings
1/2 cup fresh curds
Salt to taste
For the tempering:
2 tsp oil
1 tsp mustard
1 sprig of curry leaves
1 small red chilli
Pinch of hing/ asafoetida powder
Procedure
Wash and peel ridge gourd into pieces. Heat 1/2 tsp oil and roast jeera and green chilli, Once it is roasted add chopped ridge gourd pieces, a little salt and saute till it is cooked.
Once it is cooked turn off the flame and let it cool.
Grind coconut with, roasted, jeera, green chilli, ridge gourd pieces and salt to taste.
Make a smooth paste and transfer it into a serving bowl. Add curds to the ground paste, mix well and adjust the consistency as per your taste.
Temper with the ingredients mentioned. Serve chilled with hot rice.
